Evelyn's Favorite Baked Custard

- 4 large eggs
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1/4 teaspoon vanilla
- 2 cups scalded milk
- 1/2 teaspoon nutmeg
Preparation
Step 1
%{color: red}Preheat oven to 350⁰F%
Place 1 inch of hot water in a roasting pan, and place in oven.
Scald milk _(use 2 cup glass measuring cup, microwave on high for 4 1/2 minutes)_.

* Beat eggs slightly with a fork. _(Do not over beat)_
* Stir in sugar, salt and vanilla.
* Add a little of the hot milk to the egg mixture and stir; add remaining milk and mix well. Strain, if necessary.
* Pour into individual custard dishes, sprinkle top with nutmeg.
* Set dishes in pan containing hot water.

or until firm.
To test: run a sharp knife through centre, if knife comes out clean, the custard is done.
