Rice with Peas and cilantro

Ingredients

  • 1 cup cilantro
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 1/4 tsp chili powder
  • salt and pepper
  • 1 cup long grain rice
  • 1.5 cups water
  • 1 lb fresh peas

Preparation

Step 1

Heat oil in a medium pot over medium heat. Cook onion and garlic, stirring, until tender, 8 minutes. Add chili powder and season with salt and pepper. Cook 1 more minute. Add rice, stir to coat. Add water, bring to a boil. Reduce heat to low, simmer, covered, until water is absorbed, 15 minutes.
Remove from heat, add peas. Cover and let stand for 10 minutes. Season with salt and pepper, stir in cilantro leaves.
