Polynesian Meatballs

Ingredients

  • 1 can 20 oz crushed pineapple, divided
  • 1 pkg 20 oz, ground turkey
  • 2 C minute brown rice, uncooked
  • 3/4 C green onions, thinly sliced and divided
  • 1/2 C teriyaki sauce, divided
  • 1 egg, slightly beaten
  • 1 t ground giger
  • 1/2 t ground nutmeg
  • 2 T orange marmalade

Preparation

Step 1

Preheat oven to 350.
Drain 1/2 C pinapple for meatballs; set rest aside.
Mix turkey, drained 1/2 c pineapple, 1/2 C green onions, 1/4 C teriyaki sauce, egg, ginger and nutmeg in large bowl.
Roll into meatballs and bake for 20-25 mins.
To make sauce: mix remaining pinapple and juice, 1/4 C teriyaki sauce and orange marmalade in saucepan to heat.
Serve meatballs over cooked brown rice and pour sauce over to serve.
