Winter Greens Salad

Simple, delicious and a colorful winter salad worthy of any and all dinner tables. For the dressing, use Cindy's Kitchen Raspberry Nectar Vinaigrette. This has Omega-3s, organic and no GMO's. If you can't find, any raspberry vinaigrette should work.

Ingredients
- 1 bunch Kale (washed in hot water- this will "tenderize" the kale)
- 1 (12-ounce) container Earthborn fresh spinach
- 5 ounces Pine nuts
- Feta cheese crumbles (do not include cheese for vegan dish)
- Dried cherries (can also use dried cranberries)
- 1 large orange, cut into bite size pieces
- 1 large sweet/tart crisp apple, cut into bite size pieces
- Fresh beets, peeled and sliced thin

Preparation
Step 1
Wash the kale in hot water to tenderize the leaves. Dry the kale leaves with salad spinner or paper towels.
Mix the kale and remaining ingredients in a bowl. Refrigerate until ready to serve with your favorite dressing.
