Avocado and Tomato Spread Recipe

Ingredients

  • 1 cup plain nonfat yogurt
  • 1/2 medium avocado, peeled and mashed
  • 1 small tomato, seeded and chopped
  • 1 teaspoon grated lemon peel
  • 2 teaspoons fresh lemon juice
  • 2 tablespoons chopped pine nuts
  • 2 tablespoons chopped fresh mint

Preparation

Step 1

Line a colander with 3 layers of cheesecloth or paper coffee filters and place over a bowl.

Add yogurt. Cover and refrigerate 4 - 6 hours, allowing yogurt to drain.
Throw out liquid and add avocado. Blend well.
Mix in the rest of the ingredients. Cover and refrigerate until chilled.
