Ingredients
- 2 lbs ground turkey
- 1 1/2 cups finely chopped red peppers
- 1/3 cup tomato paste
- 2 teaspoons dried basil, crushed
- 1 teaspoon dried oregano, crushed
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 4 garlic cloves, minced
- 6 kaiser rolls, split and toasted
Preparation
Step 1
1. In a large skillet, cook turkey over medium heat until brown, stirring to break meat into small pieces; drain.
2. In a 5- or 6-quart slow cooker, combine cooked turkey, salsa, carrots, sweet peppers, tomato paste, basil, oregano, salt, cayenne pepper and garlic.
3. Cover; cook on low for 8 to 10 hours or on high for 4 to 5 hours.
4. Reserve and store* 5 cups of he meat mixture for spicy taco salad. Serve remaining meat mixture on kaiser rolls.
*To store: Place meat mixture in an airtight container; seal. Chill for up to 3 days or freeze up to 3 months. Thaw in fridge overnight before using.
