Ingredients
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 4 large garlic cloves, thinly sliced
- 1 (12 oz) bottle lager beer, such as Samuel Adams
- 4 pounds mussels, scrubbed
- 1/2 cup chopped parsley
- Accompaniment: hot crusty bread
Preparation
Step 1
Cook onion and garlic in oil in a 5- to 6-quart heavy pot over medium heat until fragrant and slightly softened, about 3 minutes.
Add beer, ¼ teaspoon salt and ¼ teaspoon black pepper and bring to a boil.
Add mussels and cook, covered, over medium-high heat until most of mussels are opened, 6 to 8 minutes. (Discard any mussels which do not open after 8 minutes.)
Stir in parsley and serve with crusty bread to sop up sauce.
