Ingredients
- 2 c heavy cream
- 1 c whole milk
- 6 lg egg yolks
- 1/2 c sugar
- 1 t vanilla extract
- 2 T brandy
- 2 T dark rum
- Freshly grated nutmeg
Preparation
Step 1
1. Set a med bowl in a lg bowl of ice water.
2. In a med saucepan, bring cream & milk to a simmer.
3. In another med bowl, whisk egg yolks w/sugar & vanilla until smooth.
4. Whisk hot liquid into egg yolks.
5. Return mixture to pan.
6. Cook over moderately low heat, stirring constantly, until mixture coats back of spoon & an instant-read thermometer reads 175°, ~5 min.
7. Immediately pour mixture into bowl set in ice bath.
8. Stir until cool, ~ 15 min.
9. Refrigerate until chilled, ~ 1 hr.
10. Add brandy & rum.
11. Pour into glasses; garnish w/nutmeg before serving.
