Ingredients
- Bread crumbs:
- Fish (Cod, Haddock, Halibut)
- 4 slices bread (torn pieces)
- 1/4 t. salt
- 1/4 t. pepper
- 2 T. butter
- Pulse 8 sec. in food processor for coarse crumbs.
- Bake 15 min in 350 degree oven. Cool 10 minutes.
- Increase oven to 450 degrees. Add shallotw to bread crumbs and 2 T. minced parsley. Toss.
- Batter:
- 2 eggs
- 3 T. mayonnaise
- 2 t. horseradish
- 1/2 t. paprika
- 1/4 t. cayenne
- 1/4 t. black pepper
- Whisk. Add 5 T. flour to batter.
- Pat fish dry.
- Coat fish with flour. Pat off. Coat with batter. Cover all. Coat (pat on) crumbs to fish.
- Bake 18-22 minutes at 450 degrees.
