Ingredients

  • Bread crumbs:
  • Fish (Cod, Haddock, Halibut)
  • 4 slices bread (torn pieces)
  • 1/4 t. salt
  • 1/4 t. pepper
  • 2 T. butter
  • Pulse 8 sec. in food processor for coarse crumbs.
  • Bake 15 min in 350 degree oven. Cool 10 minutes.
  • Increase oven to 450 degrees. Add shallotw to bread crumbs and 2 T. minced parsley. Toss.
  • Batter:
  • 2 eggs
  • 3 T. mayonnaise
  • 2 t. horseradish
  • 1/2 t. paprika
  • 1/4 t. cayenne
  • 1/4 t. black pepper
  • Whisk. Add 5 T. flour to batter.
  • Pat fish dry.
  • Coat fish with flour. Pat off. Coat with batter. Cover all. Coat (pat on) crumbs to fish.
  • Bake 18-22 minutes at 450 degrees.
