Zucchini Plain

Ingredients

  • 4 small zucchini, about 4 inches long (1 lb)
  • 2 tbsp water
  • 1 tsp salt
  • 1 tbsp margarine

Preparation

Wash zucchini. Trim off stem and blossom ends. Slice into 1/2-inch sections or shred on coarse shredder. Put water in heavy saucepan. Cover. Bring to boiling. Put zucchini in kettle. Cover. Heat until kettle is full of steam. Reduce heat to keep a good live steam. Cook 5 to 7 minutes or until crisp tender. Water should be absorbed. Salt after cooking. (Salting before cooking draws out juices and makes the zucchini soupy). Serve plain or with Savory Crumbs or Soy Sour Cream or Sour Cream Dressing (recipes in collection).
