Ingredients
- 2 med butternut squash (4-5 lbs)
- 6 T butter, melted
- 1/4 c light brown sugar, packed
- 1 1/2 t kosher salt
- 1/2 t fresh ground pepper

Step 1
Preheat oven to 400. Cut off ends of squash, peel, cut in half lengthwise and remove seeds. Cut into 1 1/4 to 1 1/2 inch cubes and place on baking sheet. Add butter, brown sugar, s&p. Toss together and spread in single layer on baking sheet. Roast 45-55 min, until tender and glaze begins to carmelize. While roasting, turn the squash a few times with spatula. Serve hot.
