Apple Raisin Baked French Toast

Ingredients
- 8 slices french bread
- 3/4 c. milk
- 3 lg. eggs
- 1 tsp. vanilla
- 1/2 tsp. ground cinnamon
- 1/2 c. firm packed brown sugar
- 3 tbsp. butter, melted
- 1/2 c. peeled & diced green apples
- 1/4 c. raisins

Step 1
Spray 4 ramekins w/ nonstick cooking spray; set aside. Using a biscuit cutter, cut bread into 2 1/2" circles
In a bowl, combine milk, eggs, vanilla, and cinnamon. Set aside.
In another bowl, combine brown sugar and butter. Add apples and raisins, tossing to coat. Spoon 1 1/2 tsp. brown sugar mixture into bottom of each ramekin. Top ea. with 1 bread round. Spoon 1 tbsp. brown sugar mix over each bread round. Top w/ remaining bread rounds.
Divide egg mixture among prepared ramekins. Cover and refrigerate overnight.
Preheat oven to 400. Bake, uncovered, till browned, approximately 25 mins. Run a knife around edge of ramekins to loosen french toast. Invert onto plates; serve immediately.
