Greek Chopped Salad

Ingredients

  • 3 tbsp. lemon juice
  • 2 tbsp. chopped red onion
  • 3 tsp. chopped oregano
  • 1 minced garlic clove
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. sugar
  • 4 tbsp. oliv oil
  • 2 hearts of romaine, chopped
  • 1 med. cucumber, peeled, seeded, and cut into 1/2"pcs
  • 2 c. cherry tomatoes, quartered
  • 1 can (14oz) chickpeas, drained & rinsed
  • 1/2 c. chopped parsley
  • 1/3 c. chopped pitted kalamata olives
  • 5 oz. feta cheese, crumbled.

Preparation

Step 1

In a small bowl, whisk lemon juice, red onion, oregano, galic, s&p, sugar. Slowly whisk in olive oil. In a large serving bowl, combine romaine, cucumber, tomatoes, chickpeas, parsley, olives, and feta cheese. Drizzle w/ dressing and toss to coat.
