Ingredients
- 6 tbl grape seed oil
- 4 lbs stewing beef (chopped in chunks)
- 3 cups finely diced yellow onion
- 2 cups chopped celery
- 4 tsp minced garlic
- 6 - 8 cups beef froth
- 4 tsp herb de provence
- 4 tbl tomato paste
- 4 tbl balsamic vinegar or worchestershire
- 4 bay leaves
- 2 tsp sugar
- 1 tsp salt/1 tsp pepper
- 2 lg chopped white potatoes
- 2 lg chopped carrots
- 2 small sweet potatoes
- 4 tbl cornstarch with 4 tbl water slurry
- 1.5 cups frozen peas
- 4 tbl fresh chopped parsley
- (Chop all vegetables the same size for best results)

Preparation
Step 1
Add 4 tbl grapeseed oil to frying pan and brown stewing beef and set aside
2 tbl grapeseed oil add yellow onion, celery, and garlic
Add beef broth, herb de provence, tomato paste, worchestershire, bay leaves, sugar, salt, and pepper and cook on medium heat for 1 hr and 15 minutes
Add chopped white potatoes and chopped carrots and continue on medium heat for 25 minutes
Add chopped sweet potatoes and continue on medium heat for 25 minutes
Thicken with cornstarch and water slurry
Add peas and parsley and continue to cook on medium for 10 minutes
