Bermuda Fish Chowder

Ingredients

  • 4-6 white fish fillets, flounder, fluke etc.
  • 4 qts water
  • salt aand pepper
  • thyme
  • bay leaves
  • peppercorns
  • 2 cloves garlic, chopped fine.
  • 3 lg onions
  • 8 stalks celery, chopped
  • 1 lb. 12 oz. can tomatoes
  • 1 10oz. can beef consomme
  • 1 cup ketchup
  • 8 sprigs parsley
  • 2 Tbsp. worsteshire sauce
  • 2 teasp. lemon juice
  • 2 lbs. peeled diced potatoes
  • 6 carrots chopped
  • A good dose of Sherry Peppers

Preparation

Step 1


Simmer white fillets in water with salt, pepper, thyme bay leaves oeooercirbsm garlic.

Saute onions, celery. Add tomatoes and beef consommme. Simmer 1/2 hr. and add to fish.

Add ketchup, parsley, worsteshire sauce, lemon juice,potatoes and carrots

Add Sherry peppers and Simmer 3 1/2 hrs.
