Ingredients

  • 20 oz can pineapple chunks 3/4 tsp salt
  • 3 tblsp rice vinegar 8 oz ground turkey breast
  • 2 tblsp ketchup 8 oz ground pork
  • 2 tblsp reduced-sodium soy sauce 2 tsp canola oil
  • 1 tblsp brown sugar 1 large red bell pepper - 1" pcs
  • 2 tsp cornstarch 1/2 sliced scallion greens
  • 1/4 tsp crushed red pepper
  • 1 large egg
  • 1 med. carrot, shredded
  • 1/4 c. finely chopped scallion whites
  • 2 tblsp minced fresh ginger
  • 1 1/2 tsp Chinese five spice powder

Step 1

Preheat to 450 - Line a baking sheet with foil & coat w/cooking spray
Drain pineapple juice into a small bowl - Whisk in next 6 ingredients - set aside
Finely chop pineapple to yield 1/2 cup - press out excess moisture w/papertowels
Reserve remaining pineapple for sauce
Lightly beat egg in large bowl - Stir in carrot, scallion, ginger, 5-spice, salt & chopped pineapple - Add turkey & pork - gently mix to combine
Using a scant 1 tblsp each - make 36 small meatballs. Bake on baking sheet - 15 min.
Heat oil in a large skillet over med. heat - Add bell pepper & cook 1 min. - Whisk the reserved juice mixture and add to the pan - Bring to a boil & cook, stirring for 1 min. Stir in remaining pineapple and the cooked meatballs.
To serve, thread a meatball & a piece of pineapple and/or pepper onto a small skewer or toothpick - Transfer to platter, drizzle w/sauce & sprinkle w/scallion
