Lamb Chops with a Mint Jelly Crust

Ingredients
- 8 lamb chops, about 4oz each
- 1 cup fresh white breadcrumbs
- 2 tablespoons mint jelly
- salt and ground black pepper

Preparation
Step 1
Preheat the oven to 375 degrees F. Place the lamb chops on a baking sheet and season with plenty of salt and ground black pepper
Put the breadcrumbs and mint jelly in a bowl and mix together to combine. Spoon the breadcrumb mixture on top of the chops, pressing down firmly with the back of the spoon making sure they stick to the chops.
Bake chops for 20-30 minutes, or until they are just cooked through. Serve immediately.
