Step 1
coat the pork roast with a mixture of mustards ( grainy mustard, creole mustard, honey) s, p, garlic, thyme, parsley
Cook the pork with pieces of garlic and shallots and onions around it. Once done, use juice as base for your sauce.
Start sauce with sautéed garlic and shallots. Add white wine, then juice from pork. Cook down. Add chicken stock if needed and then preseason with s,p, garlic. Add blackberries and let sautee for a bit. Can use blackberry juice as well or pomagranet etc.
