Garbanzo-Zucchini Salad

Ingredients

  • 2 1/2 cups zucchini, cut into bite-sized pieces
  • 1 cup cooked garbanzos
  • 1 tsp salt
  • 1 clove garlic
  • 1/2 cup onion, chopped
  • 1/2 cup celery
  • French dressing or olive oil and lemon juice

Preparation

Step 1

Steam zucchini for 10 minutes and rinse in cold water. Drain the zucchini. Cook the garbanzos until well done. Drain. Take a medium-size bowl and rub the inside with garlic. Lightly toss zucchini, onions, celery and garbanzos in the bowl. Add a little French dressing or olive oil and lemon juice. Salt to taste. Serve chilled.
