Ingredients
- 1 tbsp butter, margarine or oil
- 2 cups sliced or diced cooked zucchini
- 1 small onion, diced
Preparation
Step 1
Saute onion and zucchini in butter approximately 10 minutes. Do not overcook. Remove from heat and season to taste (salt, pepper, garlic salt, etc.)
Variation: While vegetables are being sauteed, add 2 beaten eggs. Cook like scrambled eggs and season to taste. Great idea for lunch or a meatless dinner.
