Ingredients
- 2 or 3 medium sized zucchini
- 1/4 cup chicken stock or broth
- 2 tbsp butter
- 1/2 cup grated Cheddar cheese
- 1/2 tsp salt
- 1/8 tsp white pepper
Preparation
Step 1
Scrub zucchini and slice. Arrange slices in a 2-quart glass casserole. Pour chicken stock or broth over zucchini and cook in microwave oven, covered for 7 minutes. Drain and mix in butter, cheese, salt and pepper. Microwave, uncovered, an additional minute or until cheese is melted.
Conventional Method: Bake casserole, covered, at 350 F for 30 minutes or until zucchini is tender.
