Baked Parmesan Chicken Wings

Ingredients

  • Coating:
  • 2 lbs chicken wings
  • 1/2 c. plain yoghurt
  • 3 TB lemon juice
  • 1 TB dijon mustaret
  • 3 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp sage
  • 1/2 tsp oregano
  • pepper to taste
  • 1/2 c stale breadcrumbs
  • 1/2 c grated parmesan
  • cayenne pepper and salt to taste
  • melted butter

Preparation

Step 1

Cut off wing tips. Halve wings at joints. Chop off knuckles from the "drumstick" section. Scrape meat down with sharp knife as far as possible. Chop off 1/4 " from the other sections and scrape meat 1/2 inch down bones.

Combine all ingredients through PEPPER. Add wings, toss, cover. Refrigerate 2 hrs or overnight.

In plastic bag, combine bread crumbs, parmesan, cayenne, salt. Toss wings in mixture (or otherwise coat).

Arrange wings 1" apart in buttered pan. CHILL 1 HOUR. Drizzle with melted, unsalted butter. Bake 350 - 375 for 30 minutes until golden
