Ingredients
- 1 lb. pizza dough or prepared crust
- 1 pint grape tomatoes, halved
- 1/2 - 12 oz. jar roasted red peppers, cut into 1/2-inch pieces
- 3 scallions, finely chopped
- 2 cloves garlic, finely chopped
- 1 T olive oil
- salt & pepper
- 3 oz. asiago or provolone cheese, finely shredded
Preparation
Step 1
Heat oven to 400°. In a large bowl, combine the tomatoes, roasted peppers, scallions garlic, oil, salt & pepper.
Sprinkle crust with 1/3 of the cheese. Top with tomato mixture and sprinkle with remaining cheese.
