Ingredients
- 1 lb zucchini (2 medium)
- 1 tbsp butter or margarine
- 2/3 cup cooked rice
- 1/4 tsp salt
- 2 slices (2 oz) sharp cheddar cheese, cut into 16 strips
- 1/4 cup finely chopped onion
- 3/4 cup cream style cottage cheese
- 1 tbsp snipped parsley
- 1/8 tsp dried basil, crushed
- Egg
Preparation
Step 1
Trim ends of zucchini, cook in small amount of boiling salted water for 8 minutes or until just tender. Halve lengthwise, scoop out centres and dice. Cook onion in butter or margarine till tender. Stir in zucchini, cottage cheese, rice, egg, parsley, salt and basil. Lightly salt shells. Fill with cottage cheese mixture. Place in baking dish and bake covered in a 350 F oven for 25 minutes. Place 4 cheese strips on each half and bake uncovered for 5 more minutes.
