Ingredients
- Filling:
- Small acorn or butternut squash
- 2 tbsp oil
- 1/2 lb mushrooms, chopped
- 1 cup cottage cheese
- 1/4 cup chopped parsley
- 1 cup chopped onion
- 2 cloves garlic, crushed
- 1/2 tsp basil
- 3/4 cup whole wheat bread crumbs or cooked rice
Preparation
Step 1
Use a small acorn or butternut squash. Cut off stem, split and remove seeds. Lay face down on a baking sheet. Bake at 350 F for 20 minutes or until soft. While squash is baking, prepare filling. Saute onions, mushrooms and garlic in oil. Add rest of ingredients. Stuff the baked squash. Garnish with chopped parsley or grated cheese and glaze under the broiler.
