ORANGE SLICE COOKIES

Ingredients

  • 2 cups (about 10 oz.) orange slices candy
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup shortening
  • 1 cup sugar
  • 1 cup light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups quick cooking rolled oats
  • 1 cup flaked coconut

Preparation

Step 1

Preheat oven to 350 degrees F. Lightly grease baking sheets.

Cut orange slices using kitchen scissors dipped in hot water. Cut slices in half lengthwise. Cut each half into 3 strips and snip into small pieces. Toss candy pieces with 2 tablespoons of the flour and set aside.

Stir together remaining flour, baking powder, soda and salt. In a large bowl, beat together shortening and sugars until light and fluffy. Add eggs and vanilla and beat well. Stir flour mixture into the shortening mixture. Stir in rolled oats, coconut and candy pieces. Drop dough by heaping teaspoonfuls 1 inch apart on prepared baking sheets, flattening the tops slightly.

Bake 10 to 12 minutes or until lightly browned. Transfer to wire racks to cool.

Makes about 6 dozen cookies.
