MOM'S APPLE BARS

Taste like apple pie! Brings back so many memories from childhood as mom would bake these all the time on the farm.

Ingredients

  • PIE CRUST:
  • 2-1/2 cups flour
  • 1 cup shortening
  • 3 Tbsp. sugar
  • 1/2 tsp. salt
  • FILLING:
  • 6-8 sliced apples
  • 1 to 1 -1/4 cups sugar
  • 1 tsp. cinnamon

Preparation

Step 1

Mix filling ingredients and let stand.

Mix ingredients for pie crust.

Beat 2 egg yolks in a measuring cup, add milk to make 2/3 cup total. Add this to crust mixture and mix thoroughly.

Divide crust mixture in two parts. Mom rolls each part on a sheet of wax paper and put into bottom of a jelly roll pan (11 x 15 inch).

Crush 1 cup cornflakes, and sprinkle this on the bottom crust. Add apple mixture and cover with top crust.

Beat 2 egg whites until stiff and brush on top crust.

Bake in 350 degree oven for 45 minutes or until tender.

Mom frosts with a thin powdered sugar frosting while warm. This can be served as a bar or topped with ice cream for dessert.
