Blueberry Muffins

  • 1/2 Cup margarine (not butter)
  • 1 Cup sugar
  • 2 Cups flour
  • 2 Eggs
  • 1/2 Cup milk
  • 2 Tsp baking powder
  • 1/2 Tsp salt
  • 1 Tsp vanilla
  • 2 1/2 Cups blueberries



Step 1

Heat oven to 375, or 350, if pyrex cups are used
On low speed cream margarine and sugar until fluffy
Add eggs, one at a time, and mix until blended
Sift dry ingredients and add alternately with milk and vanilla
Mash 1/2 cup of berries and stir by hand
Grease muffin teens well, sprinkle sugar over top
Bake for 30 minutes in 375 oven
Cool in pan at least 30 minutes

The pyrex cups make large muffins. Pile muffin mix high in cups and grease the top of the muffin pan
