Fresh Strawberry Vinaigrette

  • 1 cup fresh strawberries, trimmed
  • 1 tablespoon honey
  • 1/2 cup strawberry champagne vinegar
  • 1 cup olive oil
  • 1/4 teaspoon each salt and pepper


Preparation time 5mins
Cooking time 65mins


Step 1

Place strawberries and honey in the food processor and pulse until
finely chopped and very juicy. Transfer to a bowl and add vinegar. Let stand 1 hour. Strain through a fine=mesh sieve into a bowl and discard solids. whisk in salt and pepper, and then add oil in a slow stream, whisking well. Delicious over a spinach salad with fresh strawberries, goat cheese and toasted pecans.
