Ingredients

  • 2 T. vegetable oil
  • 1 yellow squash, sliced
  • 2 carrots, shredded
  • 1/2 c. chopped red bell pepper
  • 2 cloves garlic, minced
  • 2 c. diced cooked chicken
  • 1/2 c. diced tomatoes
  • 1 c. Alfredo sauce
  • 1/2 t. pepper
  • 1/2 t. creole seasoning
  • 8 oz. chipotle pepper fettuccine

Preparation

Step 1

Cook pasta according to package instructions.

While pasta is cooking, heat vegetable oil in large skillet. Saute squash and red peppers until tender, approximately 5 minutes. Add carrots and cook an additional 5 minutes. Add garlic, diced chicken and diced tomatoes. Cook for an additional 3 minutes. Add Alfredo sauce, pepper and creole seasoning. Simmer. Drain pasta and serve pasta topped with sauce.
