Ingredients

  • 1 lb chicken fillet – no skin
  • 1 cup green bell peppers – chopped
  • 1 cup red sweet peppers – chopped
  • 1 cup mushrooms – chopped
  • 1 cup white onion – chopped
  • 2 cloves fresh garlic – crushed
  • Italian herbs
  • 1/2 tsp dried chili flakes
  • 1 can chopped tomatoes
  • 1 Tb extra light olive oil
  • 2 oz mozzarella cheese

Step 1

Butterfly the chicken fillets and brush with the olive oil, rub a little ground pepper and griddled lightly on both sides. When lightly browned, place on an oven tray (with sides).
Brush a fry pan with the rest of the oil. Add garlic, onion, ½ herbs and chili and lightly fry for 2-4 minutes, until onion soft. Add the tomatoes, peppers and mushrooms. Bring to a boil, then lower heat to reduce – maybe 5 – 10 minutes. When reduced, spread over the chicken filets, slice mozzarella over top and sprinkle rest of hers over cheese. Bake in a medium oven for approximately 20 minutes. Check chicken is cooked through if filets are a little thick.
