Bacon-Parmesan Biscuits

Ingredients

  • 2 c spinach
  • 4 thin slices of bacon
  • 1 1/2 all-purpose flour
  • 1 t baking powder
  • 1/2 t salt
  • 1/4 t pepper
  • 1/4 t baking soda
  • 4 T chilled butter
  • 1/4 c grated Parmesan
  • 1/2 c + 1T milk

Preparation

Step 1

1. In a skillet over med-high heat, cook spinach & 1T water until wilted, 30 sec.
2. Transfer to a colander; squeeze out water & finely chop.
3. Wipe out skillet.
4. Cook bacon until crisp; finely chop.
5. Preheat oven to 400°.
6. In a bowl, whisk together flour, baking powder, salt, pepper, & baking soda.
7. With a pastry cutter, cut butter into flour mixture.
8. Stir in spinach, bacon, & Parmesan, then milk until just incorporated.
9. On a floured surface, press mixture to form dough into a 3/4" thick rectangle.
10. Cut 8 small rounds & arrange on a greased baking sheet.
11. Brush milk on tops & sprinkle w/Parmesan.
12. Bake until golden, 10 min.
