Ingredients
- 7 cups water
- 6 carrots, sliced
- 4 celery stalks, sliced
- 1 onion, chopped
- 1/4 cup vegetable oil
- 1 tsp salt
- 1 bag dried lentils (I like the autumn mix of lentils)

Preparation
Step 1
-combine all ingredients in large soup pot
-bring to boil and simmer, partially covered for 1 hour
-if soup is getting too thick, then cover completely during simmering
