Ingredients
- Filling:
- 1 pie crust (homemade or refrigerated)
- 4 Granny Smith apples, peeled, cored & thinly sliced
- 1/2 C plus 2 T granulated sugar
- 2 T lemon juice
- 1/2 tsp. ground cinnamon
- 2 T cornstarch
- Topping:
- 3/4 C all-purpose flour
- 1/2 C old-fashioned oats
- 1/4 C packed light brown sugar
- 1/4 tsp. ground cinnamon
- pinch of salt
- 7 T cold unsalted butter, cut into small pieces
- 1/4 C sliced almonds
Preparation
Step 1
Heat oven to 400°. Unroll crust & fit into a standard 9-inch pie plate. Flute edge as desired & refrigerate while preparing filling & topping.
Filling:
In a large bowl, combine apples, 1/2 C of the granulated sugar, lemon juice & cinnamon. Toss to coat & let stand for 10 minutes.
Topping:
In a medium bowl, combine remaining 2 T granulated sugar & the cornstarch. Sprinkle over apple mixture & toss to combine. Pour mixture into crust, mounding slightly in center. Cover with topping & transfer to oven.
Bake at 400° for 25 minutes. Cover pie with foil, reduce oven temperature to 325° and continue baking for 20-25 minutes,until apples can be easily pierced with a small knife. Cool at least 30 minutes before slicing.
