Peanut Butter and Jelly Bread

Ingredients

  • 1 3/4 Cups flour
  • 2/3 Cups sugar
  • 1 Cup (2 medium) mashed bananas
  • 3/4 Cup chunky style peanut butter
  • 1/3 Cup land-o-lakes sweet cream butter, softened
  • 2 Eggs
  • 2 Tsp baking powder
  • 1/2 Tsp baking soda
  • 1/2 Tsp salt
  • 1/2 Cup strawberry preserves

Preparation

Step 1

Heat oven to 325
In large mixer bowl combine all ingredients except preserves
Beat at medium speed, scraping bowl often, until well mixed (2-3 minutes)
Spread 1/2 the batter into greased 9x5" loaf pan
Spread preserves over layer; top with remaining batter
Bake for 60-70 minutes or until wooden pick inserted in center comes out clean
Cool 5 minutes; remove from pan
Cool completely before slicing
