Texas Caviar

Ingredients

  • Dressing:
  • 1 cup salad oil
  • 1/2 cup apple cider vinegar
  • 1/4-1/2 cup sugar
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Caviar:
  • 1 can pinto beans-drained
  • 1 can black-eyed peas-drained
  • 1 can shoepeg corn-drained
  • 1 can chopped green chilies
  • 1 cup green pepper, chopped
  • 1 cup celery, chopped
  • 1/2 cup onion, chopped
  • 1 small jar pimento, chopped
  • 1 can Rotel tomatoes

Preparation

Step 1

Combine all dressing ingredients in saucepan. Bring to a boil, stirring frequently. Cool.

Combine all caviar ingredients together in a large bowl. Add cooled dressing mixture to vegetables and mix to combine. Let marinate overnight in fridge.

Drain before serving. For ease in eating serve with Tostitos Scoops.
