Ingredients
- 3/4 cup EVOO
- 2 large cloves garlic, slivered
- 1 lb large shrimp, tail on, shelled and deveined
- 2 large cloves garlic, minced
- 2 dried hot chili peppers
- 1 tbsp. grated orange zest
- 1/4 cup minced fresh parsley
- Sal and freshly ground black pepper to taste
- 1 tbsp. dry sherry

Step 1
Warm the olive in a large skillet over medium-low heat. Add the slivered garlic, and cook gently until soft and jut starting to color, stirring occasionally. Place the shrimp in the pan in a single layer. Add the minced garlic, chili pepper, and orange zest. Cook, undisturbed for 1 to 2 minutes. When the shrimp are pink on1 side, turn them over. Add the parsley, salt and pepper, and sherry, raise the heat slightly, and cook until all the shrimp are pink, about 2 minutes more. Serve immediately.
