NEW YORK STYLE CHEESECAKE

This recipe is for the small 6 x 3 inch pans. Recipe is from pan itself.

One recipe makes two 6 x 3 inch pans.

Ingredients

  • CRUMB CRUST:
  • 12 oz. cream cheese, room temperature
  • 1/4 cup sugar
  • 1 large egg, lightly beaten
  • 1/2 teaspoon vanilla
  • 1 tablespoon cornstarch
  • 1/3 cup sour cream
  • 2/3 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 3 tablespoons soft butter

Preparation

Step 1

For crust, mix ingredients and press into bottom and 1/3 way up small 6 x 3 inch springform pan.

Bake at 350 degrees for 6 minutes.

In large mixing bowl, beat together cream cheese and sugar until smooth and light. Beat in egg, vanilla and cornstarch only until thoroughly mixed.

Stire in the sour cream until mixture is well blended.

Pour the mixture into prepared crust and bake in 350 degree oven for 35 minutes.

Allow cake to cook in the oven, with the door propped slightly open for 3 hours.

Serve with strawberries or cherries.

Makes 6 servings.
