Strawberry Rhubarb Compote

This is very simple to make. Try it as a "puddle" under honey-flavored Nonfat Yogurt Chese (recipe in collection)molded into a heart shape. This would make a nice presentation with a sprinkling of edible lavender blossoms over it. It also tastes very good all by itself.

Ingredients
- 1 pound thin young rhubarb, sliced 1/2 inch thick
- 1 pound strawberries, washed and hulled
- 1/4 cup honey
Preparation
Step 1
In a large saucepan, combine the rhubarb, strawberries, and honey. Bring to a boil. Reduce the heat and simmer gently for 10 to 15 minutes. Cool and serve chilled or at room temperature.
