Shrimp Paella

Ingredients

  • 4 tbsp olive oil
  • 1 onion (diced)
  • 3 garlic cloves (minced)
  • 1/2 tsp thyme
  • 1 can diced tomatoes (14 oz)
  • 1 bottle clam juice (8 oz)
  • 3 C chicken stock
  • 1/2 tsp pepper
  • 2 tsp paprika
  • 12 oz arborio rice
  • 1 tsp oregano
  • 24 large shrimp (pre-cooked)
  • 2 scallions (diced)

Preparation

Step 1

1. Heat 3 tbsp oil in large skillet.

2. Saute onions, garlic and thyme for five minutes.

3. Add tomatoes, clam juice, chicken stock, pepper and parika.

4. Stir in rice and bring to a boil.

5. Reduce heat to medium low and cook uncovered for 20 minutes or until rice is tender.

6. Saute shrimp in 1 tbsp oil and oregano for 3 minutes.

7. Place shrimp and scallions over rice and serve with salt and pepper.
