Ingredients

  • Crust:
  • 1 cup walnuts, divided
  • 1 1/4 cup unsifted all-purpose flour
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup butter
  • 1/2 cup flaked coconut
  • Filling:
  • 1 8 ounce package cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 21 ounce can regular or light cherry pie filling

Preparation

Step 1

Preheat oven to 350°. Grease bottom of 13x9x2 inch pan. Chop 1/2 cup walnuts coarsely for topping, set aside. Chop remaining 1/2 cup finely.

Crust:
Combine flour and brown sugar. Cut in butter with pastry blender until fine bread crumbs form. Add 1/2 cup finely chopped walnuts and coconut. Mix well. Remove 1/2 cup from mixture, set aside. Press remaining mixture onto bottom of greased pan. Bake at 350° for 12 to 15 minutes, until edges are lightly browned.

Filling:
Beat cream cheese, granulated sugar, egg, and vanilla until smooth. Spread over hot baked crust. Return to oven. Bake 10 minutes longer. Spread cherry pie filling over cream cheese layer. Combine reserved coarsely chopped walnuts and reserved mixture. Sprinkle evenly over cherries. Return to oven. Bake 15 minutes longer. Let cool. Cut into 24 bars.
