GRANDPA ROSS’ HOMEMADE WHITE BREAD

Ross makes up a batch every winter. Then Jean makes a batch of homemade chili and then they invite the whole family over for chilli and bread. A very fun memory.
Ingredients
- 1 cup milk
- 2 tablespoons sugar
- 2 teaspoons salt
- 1 cup water
- 1 yeast cake
- 1 tablespoond sugar
- 1/2 cup lukewarm water
- 7 cups sifted flour
Preparation
Step 1
Scald the milk. Add to it 2 tablespoons sugar, salt and shortening. Add 1 cup water. Cool to lukewarm.
Dissolve yeast in ½ cup lukewarm water, add 1 teaspoon sugar. Leave for 10 minutes. Add to cooled milk mixture.
Add flour gradually, mixing it in thoroughly, using just enough to prevent sticking.
Sprinkle bread board very lightly with flour and turn dough out onto board, cover and let rest 10 minutes.
Knead dough until it is smooth and elastic to the touch.
Place dough in greased bowl. Cover and let rise in a warm place until double in bulk.
Punch down. Let rise again. Divide into 2 equal portions and round each into a smooth ball. Cover and let rest 10 minutes.
Mold into loaves. Place in greased bread pans, let rise until double in size. Bake in hot oven (400 to 425 degrees) for 30 minutes. Makes two 1 pound loaves.
