Step 1

Take full head of cauliflower remove leaves and prep. Then in large pot combine 2 1/2 c dry white wine, 1/3 c olive oil, 1/4 c kosher salt, 3 tbsp fresh lemon juice, 2 tbsp butter, 1 tbsp crushed red pepper flakes, 1 tbsp sugar, 1 bay leaf and 8 c water and bring to boil. Reduce heat to simmer and add cauliflower and simmer 15-20 minutes. Then add to baking sheet and roast 30-40 minutes. For a side make whipped goat cheese of 4 oz fresh goat cheese, 3 oz cream cheese, 3 oz feta, 1/3 c heavy cream. To serve, plate and drizzle olive oil and salt and cheese. WE TRIED 4/14 AND I REALLY LIKED IT, NO ONE ELSE DID.
