Sweet Bacon Wrapped Venison

Great marinade/recipe for venison/elk tenderloin. Will give the meat a "candied" flavor.

Ingredients
- 1 lbs venison tenderloin
- 1/2 lb bacon (plain, thin sliced works best)
- 1 1/2 cups dark brown sugar
- 1 cup soy sauce
- 2 tablespoons granulated sugar
Preparation
Step 1
Mix brown sugar and soy sauce in a bowl.
Pour mixture over tenderloin and allow to marinate for 8 hours or overnight, if time permits.
Place tenderloin on slotted baking sheet. Line with aluminum foil, underneath, to make cleaning easier. Keep remaining marinade for basting.
Wrap bacon strips (raw) around entire tenderloin.
Baste with the marinade.
Cook for 25 minutes at 350F, for rare. Cook for 35 minutes for medium. Do not overcook, venison. This is a lean meat and overcooking will make it tough and dry.
Baste throughout cooking process, about every 5-10 minutes.
With 10 minutes left of cooking time, sprinkle granulated sugar over bacon. Will give the bacon a fantastic sweet crust.
Cut loin between each bacon strip and serve.
