Mimi's Fudge

Murrell Graham Wood's Fudge - started by her mother, Budda Graham in Alvin, TX.

Ingredients

  • 2 cups sugar
  • 3 heaping Tbls cocoa
  • 1 cup milk
  • sprinkle of salt
  • 2 Tbls dark karo
  • 1/2 stick butter

Preparation

Step 1

Mix sugar, salt and cocoa together in large sauce pan with karo syrup, milk & butter. Bring to boil and stir with a wooden spoon until mixture bubbles under. Use candy thermometer - temp 232 degrees. Test by dropping a bit in ice water and it forms a ball. Add 1 1/2 Tbls vanilla and 1 Tbls butter - mix until butter is melted. Add toasted pecans. Beat until it reaches the right consistency. Pour out on wax papaer and let cool.
