Sunshine Muffins

Ingredients

  • 1/2 Cup Milk
  • 1/4 Cup Vegetable Oil
  • 2 Eggs
  • 1/2 Cup Raisins
  • 1 1/2 Cups Rolled Oats
  • 2 Cups Baking Mix (Bisquick)
  • 1/2 Cup Sugar
  • 1/2 Cup Brown Sugar, firmly packed
  • 1 tsp. Cinnamon
  • 1/2 Cup Shredded Carrot
  • 1 Cup Shredded Apple
  • 1 (20 oz.) Can Crushed Pineapple, drained
  • 1/4 Cup Chopped Walnuts

Preparation

Step 1

Combine milk, oil, and eggs in a medium bowl and beat lightly. Stir in raisins and oats. Let stand for several minutes. Add baking mix, sugar, brown sugar, cinnamon, carrot, apple, pineapple, and walnuts, and mix just until moistened. Spoon into greased muffin cups, filling 1/2 full. Bake at 400 degrees for 20 minutes or until golden brown. Serves 12.
