Sedberry Inn Pineapple Muffins

  • Icing:
  • 3/4 Cup Butter, softened
  • 1 1/2 Cups Sugar
  • 3 Eggs, beaten
  • 3 Cups Flour
  • 3 tsp. Baking Powder
  • 1 (20 oz.) Can Crushed Pineapple
  • 2 Tbs. Orange Extract
  • 2 Tbs. Milk
  • 2 Tbs. Butter
  • 2 Cups Powdered Sugar
  • 2 Tbs. Orange Extract



Step 1

Cream butter and sugar; do not overbeat. Add beaten eggs and beat lightly. Add dry ingredients, then pineapple and orange extract, mixing only till blended. Bake in greased muffin tins at 350 degrees for about 20 minutes (or 12 minutes for mini muffins). Do not allow muffins to brown on top. Ice while muffins are still warm. Yield: 3 dozen regular or 6 dozen mini muffins. For icing: In saucepan, heat milk and butter, but do not boil. Add powdered sugar and orange extract; mix well.
