Flan

This is wonderful served with a layer of blueberries or raspberries on the bottom of the baking dish. For variety, whisk in 1 teaspoon of orange, lemon, or lime zest.

Ingredients

  • 2 cups nonfat milk
  • 1 cup egg whites (approximately 8 eggs)
  • 1 tbsp pure vanilla extract
  • 1 tbsp maple syrup
  • 1 tsp honey

Preparation

Step 1

Preheat the oven to 325 F.

In a medium bowl, whisk together the milk, egg whites, vanilla, maple syrup, and honey. Pour the custard into a 4-cup souffle dish, set the dish in a large pan, pour in hot water to within 2 inches of the top of the dish, and bake for 40 to 50 minutes, or until the center is just set; do not overcook or the flan will be dry. Rest for 10 minutes before serving. Serve chilled or at room temperature.
