Payday Bars

For as much as I love chocolate, you might be surprised to hear that one of my favorite candies has absolutely no chocolate in it--I love Paydays! I love the combination of the salty nuts and the sweet caramel candy surrounding them. When I saw this recipe for Payday bars, I knew I had to try them. I was really impressed with these and I find myself grabbing one every time I open the fridge--yes, they are that good!

Ingredients

  • Crust:
  • 1 yellow cake mix
  • 1/3 cup softened margarine
  • 1 egg
  • .................................
  • Filling:
  • 3 cups mini-marshmallows
  • 2/3 cup light Karo syrup
  • 1/4 cup margarine
  • 2 teaspoons vanilla
  • 12 oz peanut butter chips
  • 12 oz dry roasted peanuts

Preparation

Step 1

1. Preheat oven to 350

2. Combine cake mix, 1/3 cup margarine and egg in mixer. Pat in a lightly greased 9x13 pan. Bake 10-15 minutes (do NOT overbake).

3. Add marshmallows, and return to oven for 5 minutes or until they are puffy. Cool.

4. In a small sauce pan add Kayro syrup, 1/4 cup margarine and vanilla. Bring to a boil. Remove from heat and add peanut butter chips until creamy. Add 1/2 of the peanuts and stir.

5. Spread mixture over marshmallows, and sprinkle remaining peanuts over the top.

6. Cool and keep covered.
