Secondo - Beef - Braciole Alla Contadina

Ingredients

  • 800 grams ‘braciole’ ( sliced quite thin about .5 cm) of beef eg. groppa, noce, sottonoce o scamone.
  • 250 grams diced tomatoes ( tinned) or very mature fresh tomatoes ( Roma or ‘egg’ tomatoes preferable
  • 1 stalk of celery
  • 1 carrot
  • 2 garlic cloves
  • 3 basil leaves
  • 6 tablespoons of olive oil
  • 1 glass of red wine
  • salt & pepper to taste

Preparation

Step 1

Cut the celery, carrot, garlic, basil very finely and saute together lightly in the oil. Put this mixture in a fry pan ( skillet) and toss together for 3 minutes, turning always. Then we add the beef, salt & pepper ( about 3 pinches of each), add the wine and let simmer for 10 minutes. Leave, and do not stir. Let the wine evaporate. When the wine evaporates, add the tomatoes, cover and let cook on low heat for 1 hour.
